Does copy do any checking on the source before copying to the destination? I’m curious as to how to prevent copying a corrupted repository to my offsite. Should I do a check of both repos before copying?

Not related to your question, but you may want to consider running your on- and off-site backups separately. If the on-site storage fails, a backup operation will as well and there will be no snapshot to copy. Also, in the very-unlikely event that a bug in the storage module for your on-site storage or the storage itself does something weird to the data that the rest of Duplicacy doesn’t catch, the bad data won’t be propagated off-site.
